Stevia is a sweetener and sugar substitute derived from the leaves of the plant species Stevia rebaudiana, native to Brazil and Paraguay. The active compounds are steviol glycosides (mainly stevioside and rebaudioside), which have 30 to 150 times the sweetness of sugar, are heat-stable, pH-stable, and not fermentable. The body does not metabolize the glycosides in stevia, so it contains zero calories like some artificial sweeteners. Stevia’s taste has a slower onset and longer duration than that of sugar, and some of its extracts may have a bitter or licorice-like aftertaste at high concentrations.
Stevia Natural Sugar from Stevia Leaves
Stevia rebaudiana is a small bush native to Paraguay. Its leaves contain approximately 10% of glucosides, which are intensely sweet compounds (250-300 times sweeter than sugar). The leaves have been traditionally used for hundreds of years in Paraguay and Brazil to sweet local teas, medicines and as a sweet treat (25-30 times sweeter than sugar). Japan is now the largest consumer of stevioside extracted from Stevia leaves; in Japan, Stevia replaces the chemical sweeteners, aspartame etc. which are banned there since 1970’s in diet soda, gums and other food and beverages. The Stevia plant is naturally rich in low calories sweeteners and numerous phytonutrients, volatile oils, minerals vitamins, proteins, and fiber. Today it is consumed by millions of people from its native origins of Paraguay and Brazil to Japan, Korea, China, India, Australia, Canada, Russia, Malaysia, Thailand, Germany, South Africa, and many other countries.
